Does it change any harvest entries in Croptracker?
No. It only reads the day's picked totals to build the report. Correcting a picking entry is still done by whoever logs it in Croptracker.
What does it compare today's yield against?
It compares today's total bins picked against your season target and, once you have a full prior season logged, against the same picking day last year, so you can see if you're ahead or behind pace.
What if a block wasn't picked today?
It only totals blocks with harvest entries logged for the day, so a block that wasn't picked simply doesn't appear rather than showing as zero.
